Garlic Lemon Dill Salmon

It's time for another month of  The Secret Recipe Club.





























This month I was assigned to Heather's blog, It's Yummy to My Tummy. I was so tempted to make her Funnel Cakes, because it's summer and all I can think about is festivals and state fairs with funnel cakes. I also want to try her Cilantro Lime Chicken BLAT Sandwich and I plan to soon ... mmm looks like the perfect summer dinner. Also intrigued by her Strawberry Cream Cheese Sugar Cookies... loving the use of strawberry cream cheese in these!

But I've been diggin salmon lately and went the healthier route than usual lol. I love lemon and fish but add garlic and that perfect dill flavor, and I'm sold. We didn't grill ours, but instead pan-seared them. Whether you grill, pan-sear, or bake it, it's sure to please. 

Can't believe I'm saying this, but I officially like salmon. Like, love salmon. Never thought those words would come from a steak n potatoes lovin kinda gurl like me  :)

Garlic Lemon Dill Salmon
adapted from It's Yummy to My Tummy
  • four 6-8 ounce salmon fillets (with skin on)
  • juice from 1/2 of a lemon
  • 3 teaspoon fresh dill 
  • 2 teaspoon minced garlic 
  • 1 teaspoon lemon pepper seasoning
  • 4 tablespoons butter, melted
  • salt and pepper, for seasoning
  • 1 tablespoon butter
In a bowl, add melted butter, lemon juice, dill, garlic, and seasonings together. Mix well. Brush on the top of the salmon fillets. 

Preheat skillet, add 1 tablespoon butter. Place salmon fillets, skin side down, in the skillet. Do not turn the salmon fillets until they are almost done, at least 5 minutes or until they start to look more opaque. The result will be a crispy skin. That last flip of the salmon only lasts for a few seconds, as you want it on long enough just enough to give a nice sear on top.

Baked Tilapia with Creamy Lemon Dill Sauce






















There are so many amazing food blogs out there. Don't you agree? One of my faves is Jenn's Food Journey. That girl is a master at grilling, and she also shares my love of sauce. She does love fish too, tilapia in particular! And she is so sweet... she has invited me to be a guest blogger on her blog, and helped me with any questions I had in improving my blog. She's a sweetheart! And she also makes some great food! Like this tilapia dish, with a delicious sauce. I'm glad I'm not the only one who appreciates a good sauce, whether it be with seafood, beef, pork, or any kind of meat! We both share a love of sauce, that's why I love her! Yes, meat is delicious. But add some sauce and it is pretty irresistible. 




















Baked Tilapia with Creamy Lemon Dill Sauce
slightly adapted from Jenn's Food Journey
  • 2 tilapia filets
  • salt, pepper, and garlic powder, for seasoning
  • 2 tbsp cream cheese
  • 2 tbsp lemon juice
  • 1 tsp dried dill weed
Preheat oven to 425 degrees. Spray a baking dish with cooking spray. Rinse the fish and pat dry. Season both sides with salt, pepper, and garlic powder. Place fish in the prepared baking dish and place in the oven. Baked for 15 minutes, rotating dish halfway through. 

While the fish is baking, place the remaining ingredients in a small bowl. Mircowave on low for about 20 seconds or until ingredients are blended smoothly. Stir until smooth. Let sit for 5 minutes. Serve over fish or on the side. 



















We haven't always necessarily been fish kind of people, but add some sauce and we are set! This was definitely a delicious fish dish with a flavorful sauce. I would definitely make it again!

Tilapia Meuniere... and a Guest Post at Delightfully Dowling!















Hey guys! Hope your weekend is starting off well! I can't wait to celebrate mother's day with my mama to show her how much I love her :)
  
Yes, I am a chicken and steak gurl, but sometimes I like my fish too! And yes, I still like to drench it in sauce, just to take the healthy aspect away from it :) This is one of those classic, yet fancy French fish dishes that is sure to impress any fish lover. It is typically made using sole, but it is difficult to find that in my local grocery stores, so I opted for tilapia. But if you can find sole near you, please do make it with that! Keep it authentic :) All it takes is a simple dredging in the flour, sauteeing in the skillet, topped off with squirts of lemon juice and melted browned butter. What's not to love about this?

First you wanna season the fish on both sides with sea salt. Then dredge those fish in the flour, covering on all sides and then tapping off all of the excess.



















Add 2 tablespoons of melted butter to a hot skillet, on medium heat. I used my cast iron skillet. Sear the fish on medium-high heat for 3 minutes and then flip. Possibly more, depending on the size of your fish. When the fish is done, it should look opaque in the center.

















Remove the fish from the skillet when they are completely cooked. Set aside. Then pour the remaining butter into the hot skillet and brown that butter! Don't burn, but brown :) Pour lemon juice directly on the fish and sprinkle with parlsey. Then pour the melted brown butter on top of the fish, and a beautiful froth will form.















Tilapia Meuniere

*Serves 2
  • 2 pieces tilapia (or sole)
  • 1 stick of butter, melted
  • 1/2 cup flour, for dredging
  • 1/2 a lemon
  • a handful of fresh chopped parsley
  • sea salt
Season the fish with sea salt on both sides and then dredge in the flour, covering evenly. Tap off any excess flour.

Heat a skillet on medium, adding 2 tablespoons of the melted butter into the hot skillet. Add the fish and sear on medium-high heat for three minutes and then flip. Depending on the size of the fish, you may have to cook it a bit longer. The fish should be opaque in the center. Remove the fish from the skillet when finished cooking and set aside.

Pour the remaining melted butter into the hot skillet. Cook until the butter browns, about 2 minutes or so.

Pour the lemon juice from the lemon directly on the fish and sprinkle with parsley. Top the fish with the melted butter, and a buttery lemon froth will form.

We served it with some cheesy asparagus and mushrooms! Or you could serve it with some Garlic and Lemon Roasted Asparagus, or Sauteed Green Beans with Mushrooms and Onions.
