Creamy Lime Cilantro Ranch Dressing

That's a long name for something so simple! This just may be my new favorite dressing. I already gushed about my newfound love of this sauce on a previous post. It is so versatile! Like I said, I originally made it as a dipping sauce for some Chicken Flautas, then as a dressing on a salad, and I also drizzled some on our Chicken Fajitas the following day!

Or if you are a sauce kinda gurl or guy, you can just slurp it off of your fingers... straight up, like me. Yes, I did test it out for you guys like that.

It is THAT good!

The ladies over at Our Best Bites used 1 lime to get about 2 tablespoons. I dunno how they dun it. Cuz 1 lime didn't even get me 1 tablespoon! And I had only bought one lime. So in a pinch, I used my lime juice that comes in a mini bottle. If you want to use only fresh lime juice, be sure to buy at least 3 limes to yield 2 tablespoons of juice, maybe even more! I would have definitely bought more limes if I had known. Next time I will know better, and there will be a thousand more next times!

















Creamy Lime Cilantro Ranch Dressing
  • 1 (1-oz) packet of Hidden Valley ranch dressing mix
  • 1 cup mayo
  • 1/2 cup milk
  • 2 tablespoons lime juice (may need at least 3 limes, or you can just use bottle lime juice)
  • 2 cloves garlic, minced
  • 1/2 cup roughly chopped cilantro
  • 1/4 cup La Costena medium green salsa 
  • hot sauce, to taste
Blend mayo, milk, and ranch mix in a blender. Add lime juice, then garlic, cilantro, and salsa. Blend well. Add hot sauce to taste. Refrigerate and let thicken.



Please go make this now. No matter what you do with it, your meal will be a better one because of it. And that's a promise.

Mexican Sour Cream Rice
















By now, you probably know how much I love Cassie. That girl is a culinary genius in my eyes. And our stomachs agree! We are always thoroughly satisfied with her recipes.... and here's another one that didn't disappoint. Mexican Sour Cream Rice.





















And PJ thought he wasn't a big fan of rice, ha!

Mexican Sour Cream Rice
slightly adapted from Cassie Craves
  • 1 cup uncooked extra long grain enriched white rice (I used Mahatma)
  • 1 (14.5 oz) can chicken broth
  • 1 cup sour cream
  • 1 (4 oz) can diced green chile peppers
  • 2 cups shredded pepper jack cheese, divided
  • 1 1/2 cups frozen corn
  • 1/4 cup finely chopped fresh cilantro
  • salt and freshly ground black pepper, to taste
In a large pot, bring the rice and chicken broth to a boil. Reduce heat to low, cover and simmer 20 minutes.

Preheat oven to 375 degrees. Lightly grease a casserole dish with cooking spray.

Add sour cream, green chile peppers, 1 cup cheese, corn, and cilantro to the pot of cooked rice. Season with salt and pepper. Transfer to the prepared casserole dish and top with the remaining cheese.


Bake uncovered for 30 minutes, until cheese is bubbly and lightly browned.



This side dish would be perfectly paired with any Mexican main dish! How about serving it with some chicken taco lasagna, or white chicken enchiladas, or even with some Mexican chicken?

Menu Planning - Week of 5/9/11

Happy Monday! Did everyone have a great Mother's Day weekend? If you are a mother, I hope you were shown how much you're appreciated... and if not (like me) then I hope that you were the one showing your appreciation to your mamas! I sure did. We enjoyed a nice dinner on Saturday with my brother at Outback, and I took her to see "Jumping the Broom" on Sunday. Plus I doted her with plenty of love, and perfume and clothes of course! I hope she enjoyed her Mother's Day weekend. I really wanted to show her how much I love her. Mothers are the best, aren't they? No one will ever love you like your mama.

This week is also our 11th anniversary together. Yes, I am only 26, and yes I have been with him since I was 15. On Thursday, May 12, we will for sure go out to eat at a fabulous restaurant to celebrate our love!

Such a great week full of love! I get to show the two most important people in my life how much I love them this week! Of course I try to show them every day of the year, but especially on these two days. I'd say I've got some great people to be grateful for!

Are you guys sick of me talking about how much I love my mama and my fiancee yet? Sorry! I know you are here for the food! So on to the menu plan....

Tilapia Meuniere... and a Guest Post at Delightfully Dowling!















Hey guys! Hope your weekend is starting off well! I can't wait to celebrate mother's day with my mama to show her how much I love her :)
  
Yes, I am a chicken and steak gurl, but sometimes I like my fish too! And yes, I still like to drench it in sauce, just to take the healthy aspect away from it :) This is one of those classic, yet fancy French fish dishes that is sure to impress any fish lover. It is typically made using sole, but it is difficult to find that in my local grocery stores, so I opted for tilapia. But if you can find sole near you, please do make it with that! Keep it authentic :) All it takes is a simple dredging in the flour, sauteeing in the skillet, topped off with squirts of lemon juice and melted browned butter. What's not to love about this?

First you wanna season the fish on both sides with sea salt. Then dredge those fish in the flour, covering on all sides and then tapping off all of the excess.



















Add 2 tablespoons of melted butter to a hot skillet, on medium heat. I used my cast iron skillet. Sear the fish on medium-high heat for 3 minutes and then flip. Possibly more, depending on the size of your fish. When the fish is done, it should look opaque in the center.

















Remove the fish from the skillet when they are completely cooked. Set aside. Then pour the remaining butter into the hot skillet and brown that butter! Don't burn, but brown :) Pour lemon juice directly on the fish and sprinkle with parlsey. Then pour the melted brown butter on top of the fish, and a beautiful froth will form.















Tilapia Meuniere

*Serves 2
  • 2 pieces tilapia (or sole)
  • 1 stick of butter, melted
  • 1/2 cup flour, for dredging
  • 1/2 a lemon
  • a handful of fresh chopped parsley
  • sea salt
Season the fish with sea salt on both sides and then dredge in the flour, covering evenly. Tap off any excess flour.

Heat a skillet on medium, adding 2 tablespoons of the melted butter into the hot skillet. Add the fish and sear on medium-high heat for three minutes and then flip. Depending on the size of the fish, you may have to cook it a bit longer. The fish should be opaque in the center. Remove the fish from the skillet when finished cooking and set aside.

Pour the remaining melted butter into the hot skillet. Cook until the butter browns, about 2 minutes or so.

Pour the lemon juice from the lemon directly on the fish and sprinkle with parsley. Top the fish with the melted butter, and a buttery lemon froth will form.

We served it with some cheesy asparagus and mushrooms! Or you could serve it with some Garlic and Lemon Roasted Asparagus, or Sauteed Green Beans with Mushrooms and Onions.

Chicken Taco Lasagna with Cilantro Lime Sauce, for Cinco de Mayo!




















I'm baaaaaaaaaack! It's strange, right? You usually don't see me this often in one day. But it's for a good reason... to post some yummy Mexican recipes in celebration of Cinco de Mayo!

If you just saw my homemade taco mix, you also saw that I said I would be sharing a yummy taco lasagna recipe, which we used the taco mix in. So here it is! Brace yourselves!

The original recipe called for black beans only, and no meat. Well we are meat eaters at our house, (plus we had some chicken in the fridge to use up!) so we decided to turn this into a Chicken Taco Lasagna with Cilantro Lime Sauce. We just cut down on some of the black beans and subbed in some shredded chicken instead. But if you wanna be all vegetarian on me, then do only use the black beans. And I guess we can still be friends :)

I also used more tortillas, to make another layer. I like my lasagna to be stacked! Oh, and try to find larger sized tortillas. We used what we already had - fajita size - and it wasn't quite large enough to fully cover the lasagna. So buy a larger kind if you can!


































Chicken Taco Lasagna with Cilantro Lime Sauce
adapted from Sweet Peas and Pumpkins
  • 1 teaspoon vegetable oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 of a red bell pepper, deseeded and chopped
  • 1/2 of a green bell pepper, deseeded and chopped
  • 1 tablespoon jalapenos, chopped
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 boneless skinless chicken breast (about 1.5 cups), cooked and shredded
  • 1 cup frozen corn
  • 1 recipe of Homemade Taco Mix
  • 1/4 cup beer (I used what I had on hand - Bud Lite Lime)
  • 3/4 cup sour cream
  • 3/4 cup mayo
  • 1/2 cup chopped cilantro
  • 2 tablespoons lime juice
  • salt and pepper to taste
  • 2 cups shredded cheddar or Mexican cheese
  • 8 flour tortillas
Preheat oven to 375 degrees.

Heat the oil in a large skillet on medium-high heat. Add the onions and cook for 5 minutes. Add garlic, bell peppers, and jalapenos. Cook for 4 minutes or until veggies are browning slightly.

Add black beans, shredded chicken, and corn and stir well. Add in the taco mix and beer. Stir and bring to a heavy simmer. Reduce to a slow simmer until beer evaporates, about 5 minutes. Remove from heat. 

In a bowl, mix the sour cream, mayo, cilantro, lime juice, and salt and pepper.

Spray a 9x13 baking dish with cooking spray, and then layer two tortillas on the bottom layer. Add 3/4 of the black beat and meat mixture. Top with 3/4 of the cilantro lime sauce and 3/4 of the cheese. Repeat two more times, creating three layers of lasagna. Top with the last two tortillas and sprinkle with cheese on top.

Bake at 375 degrees for 15 minutes, or until bubbly and cheese is melted. Let stand 10 minutes before serving.

Homemade Taco Mix, for Cinco de Mayo

Happy Cinco de Mayo, amigos!

Over the next few days I will be bringing you some Mexican recipes that you are sure to love! So let's start with something simple.... Homemade Taco Mix!

Sometimes it's better to just make the homemade version instead of buying the pre-packaged version. Am I right or am I right? Why buy the packet at the store when I have every single seasoning at home already? 

And it's easy! It's just measuring and then mixing spices together, people! Can't get much simpler than that! So do it, and use it in any recipe that calls for a taco mix :)

Homemade Taco Mix
from Sweet Peas and Pumpkins
  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon oregano
  • 1 teaspoon paprika
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
Mix well and you're set!

We made this to go in and flavor an amazing Chicken Taco Lasagna we had last night. We are having the leftovers today too for dinner, for Cinco de Mayo.  I'll have that taco lasagna recipe for you soon and very soon!

What's everybody doing for Cinco de Mayo? Besides making and blogging about some tasty Mexican dishes, I'll probably just hang at home with a Bud Lite Lime or two with my amante! Don't get too drunk  :)

Menu Planning - Week of 5/2/11

Hey pals! It's officially May, we are almost halfway through 2011! I feel like it was just days ago that we were talkin resolutions for the year! Oh how time flies.

Last week we did make some Zuppa, and PJ took some to our friend, Sheila at work. She is interested in my blog and PJ is always telling her about it, and he bragged about the homemade Zuppa Toscana that was better than the Olive Garden version, and Sheila really wanted to try it. So we made enough to give her a bowl. Now some other coworkers of his want us to bring them some, plus I really wanna make some for PJ's mama because she always supports my blog so I need to make her something! And my brother loves the Zuppa from Olive Garden so I wanna kinda brag and let him try ours and see what his response is. So basically we have alotta people wantin to try that Zuppa! Gonna have to make it again soon :)

We did make those Baked Creamy Chicken Taquitos , and while they were good, the real star was the sauce we used to dip them in! Oh my word! I will have to blog about it soon! Let's just say I used it as a dipping sauce for the taquitos, as a dressing on a salad the next day, and as a sauce on our chicken fajitas last night. It's THAT good! I think I need practice on those taquitos, I think I used too much filling and therefore they were pretty thick and much of the filling was oozing out. Next time I will buy smaller tortillas too and not fill them as much. They were fantastic with that sauce, but next time I may make a guac to dip them in.

We didn't get around to the taco lasagna, or bbq shepherd's pie. Oops!

Time to do it all over again!
